Aqualab series 4TE Duo: One instrument measures both water activity and moisture content

In food manufacture and processing, moisture content and water activity are generally measured using separate analytical instruments.  Combining the two analyses in one instrument can save time and labour.

Decagon’s new AquaLab Series 4TE DUO now makes it possible to measure both water activity and moisture content using proven water activity measurement technology.

To measure moisture content using water activity requires an understanding of the relationship between the two parameters.  This relationship, referred to as the moisture sorption isothem, is complex and unique to each product type.  It must be determined experimentally by measuring water content content at several water activity values.

The new AquaSorp Vapor Sorption Analyzer can rapidly generate robust isotherms with complete data resolution.  Once the isotherm has been generated, it can be loaded into the AquaLab Series 4 DUO and used to determine moisture content based on a water activity measurement generated by the instrument.
