S like … Salt: what about solutions?
A basic and essential ingredient in the food industry, salt, through the sodium it contains
(almost 40%), is nowadays highly controversial due to its over consumption in western society.
In its findings from 8 June 2010, the Council of Europe reiterated the fact that excess
consumption of salt is one of the main factors contributing to raised blood pressure and therefore
cardiovascular diseases. Cardiovascular diseases are the cause of almost half of all deaths, that is
42% in the EU (or more than 2 million deaths) at a total cost of 192 billion euros.
Therefore, W.H.O, EFSA, AFSSA, Ministry of Health, consumer associations...the pressure
is increasing around sodium reduction. Will you wait until recommendations becomes
regulation? Do you even want to take the risk to bet on it?
Indeed, due to awareness campaigns all over the world, consumers are more and more
educated on the impact of sodium on their health and consequently pay more attention to the
quality of the components of the product. Nevertheless, consumers are definitely not ready to
accept any compromise on taste, consumer requirements are focused around 3 areas:
1. Health: Increasingly well-informed, they are conscious of the potential impact of sodium
on their health,
